- 3 large ears corn
- 1 c. flour
- 1 Tbsp. sugar
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. pepper
- 2 large eggs
- 1 c. milk
- 2 Tbsp. cooking oil
Directions

1With a sharp knife, cut kernels from corn.

2With back of a knife, scrape cobs to release milky pulp.

3Make at least 2 cups. In a large bowl, stir together flour, sugar, baking powder, salt and pepper.

4In a small bowl, beat together eggs, milk and cooking oil.

5Add to flour mixture, stirring only until flour is moistened.

6Stir in corn.

7Cook in hot oil, 2 tablespoons batter for each pancake.

8Makes 24 pancakes.

9Serve with maple syrup.
