- 1/2 c. water
- 1/4 c. sugar
- 1 Tbsp. mint
- zest of 1 lemon
- 2 c. strawberries
- 2 c. cantaloupe
- 2 c. honeydew melon
- ginger
- champagne
- lemon slices
Directions

1Bring to a boil 1/2 cup water and 1/4 cup sugar until consistency of syrup.

2Add 1 tablespoon mint and lemon zest.

3Turn off and cool.

4Mix together all fruits.

5Pour cooled syrup mixture over fruit.

6Add fresh ginger.

7Let sit for 1/2 hour.

8Divide fruit into tall glasses (can use champagne type).

9Fill glass with champagne or dry grape juice to cover fruit.

10Garnish with fresh lemon slices.
