- 2 tbsp fresh ginger
- 2 1/2 cup water plus 1/4 cup
- 1 tsp lemon juice
- 1 tsp lemon zest (1/2 lemon)
- 1 tsp honey
Directions

1Peel and thinly slice ginger.

2Pound to break apart with mallet.

3Grate the lemon.

4On high heat, add ginger, lemon zest and lemon juice to water and bring to boil, then reduce heat, but maintain a slow boil for about 10 minutes.

5Drain.

6Add 1/4 cup water.

7Add honey (if desired).
