  • 3 ounces, weight Butter
  • 1 cup Sugar
  • 2 whole Eggs
  • 2 Egg Yolks
  • 2/3 cups Freshly Squeezed Lemon Juice

Directions

    In a large bowl cream together the butter and sugar. Add the eggs and egg yolks and mix until fully incorporated. Stir in the lemon juice. It will look curdled at this point.

    Place the bowl over a pan of simmering water and whisk continually until the mixture reaches 175 F.

    Pour the lemon curd into a container and refrigerate.
