  • 2 1/4 c. flour
  • 1 1/2 c. sugar
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 tsp. salt
  • 1/2 c. shortening
  • 1 tsp. grated orange rind
  • 1/4 c. unstrained orange juice
  • 3/4 c. water or milk
  • 1/3 to 1/2 c. unbeaten eggs (2 to 3)

Directions

    Sift together the first 5 ingredients into bowl.

    Add the shortening and orange rind.

    Measure the orange juice and water or milk into a liquid measuring cup.

    Add 2/3 of this liquid to dry ingredients.

    Beat on medium speed for 2 minutes.

    Add remaining liquid and the unbeaten eggs.

    Beat 2 more minutes.

    Bake in two 8 x 1 1/2-inch greased and floured pans at 350° for about 30 minutes, or until done.
