Ingredients
- 2 eggs
- 2 Tbsp. olive oil
- 1/2 c. warm water
- 1/4 tsp. salt
- 2 1/4 to 3 c. flour
Directions

1Beat eggs, oil, water and salt together until foamy.

2Add enough flour to make a dough that is soft and elastic (much like soft bread dough, but not sticky).

3Wrap in a towel; let rest about 10 minutes.

4Divide dough into 3 to 4 smaller balls.

5Flour and roll through pasta maker; cut as desired.

6Or roll very thin with rolling pin on floured surface and cut with sharp knife. Cook in boiling water until al dente.
