Fresh Peach Glace Pie

  • 3 lb. peaches, peeled and sliced
  • 3/4 c. water
  • 3 Tbsp. cornstarch
  • 1 c. sugar
  • 1 tsp. lemon juice
  • 1 (8 or 9-inch) baked crust

    Simmer 1 cup peaches with the water for 4 to 5 minutes. Combine sugar and cornstarch and add to cooked fruit.

    Cook until thick and clear, stirring constantly.

    Add lemon juice.

    Cool slightly.

    Put remaining fresh peaches in the baked pie shell. Pour glace over the fruit and cool.

    Serve with whipped cream. Serves 6.
