Fresh Peach Glace Pie

- 3 lb. peaches, peeled and sliced
- 3/4 c. water
- 3 Tbsp. cornstarch
- 1 c. sugar
- 1 tsp. lemon juice
- 1 (8 or 9-inch) baked crust
Directions

1Simmer 1 cup peaches with the water for 4 to 5 minutes. Combine sugar and cornstarch and add to cooked fruit.

2Cook until thick and clear, stirring constantly.

3Add lemon juice.

4Cool slightly.

5Put remaining fresh peaches in the baked pie shell. Pour glace over the fruit and cool.

6Serve with whipped cream. Serves 6.
