Fresh Peach Pie

- 1 c. sugar
- 2 Tbsp. cornstarch
- 1 c. water
- 1 (3 oz.) pkg. peach flavored Jell-O
- 3 c. sliced, peeled, ripe peaches
- 1/4 tsp. almond extract
- 1 (9-inch) baked pastry shell
- whipped cream or Cool Whip (optional)
Directions

1In a saucepan, combine sugar, cornstarch and water until smooth.

2Cook and stir over medium heat until bubbly and thickened.

3Remove from heat.

4Stir in Jell-O until dissolved. Cool.

5Arrange peaches in pie crust; pour cooled filling over peaches.

6Chill in refrigerator until set, at least 2 hours. Serve with Cool Whip or whipped cream.
