"Fresh" Peach Pie

  • 1 frozen pie crust, thawed and baked
  • 5 or 6 fresh, ripe peaches
  • 1 c. sugar (1/2 c. NutraSweet for diabetics)
  • 1 c. water
  • 2 Tbsp. cornstarch
  • 5 Tbsp. peach or apricot jello

Directions

    Peel peaches and slice in bowl.

    Put sugar, water and cornstarch in plastic pan (microwave bowl).

    Cook 1 minute at a time in microwave until thick and clear.

    Add jello.

    Put peaches and jello mixture in crust alternately.

    Use whipped cream or Cool Whip for topping, if desired.
