  • 3/4 c. sugar
  • 2 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1/3 c. water
  • 4 c. sliced peaches
  • 1 Tbsp. oleo
  • 1/2 tsp. grated lemon rind
  • 1 Tbsp. lemon juice
  • 1/2 tsp. almond flavoring

Directions

    Combine sugar, cornstarch and salt in pan; stir in water and peaches.

    Bring to boil and boil 1 minute, stirring gently. Remove from heat; stir in butter or oleo, lemon rind and juice and almond flavoring.

    Cool.

    Bake in 425° oven for 40 to 45 minutes, using your favorite pie crust recipe.
