  • 6 Anaheim chilies, roasted, peeled and diced or 2 cans (4 oz. each) chopped green chilies
  • 4 large tomatoes, chopped
  • 3 green onions, sliced
  • 2 Tbsp. minced fresh cilantro or parsley
  • 1/2 to 1 jalapeno pepper, seeded and minced
  • 1 garlic clove, minced
  • 1/3 c. cider or red wine vinegar
  • 1/3 c. olive or vegetable oil
  • 1/2 tsp. pepper
  • 1 tsp. salt, optional

Directions

    In a bowl, combine chilies, tomatoes, onions, cilantro, jalapeno and garlic. In another bowl, combine vinegar, oil, pepper and salt if desired; stir into vegetable mixture. Cover and chill for at least 2 hours. This has 2 grams carbohydrate.
