Fresh Spring Pea Soup

- 1 Tbsp. butter (or a couple of onions diced in salt pork)
- 1 c. small potato, diced
- 3 c. chicken broth
- 1 c. freshly shelled green peas (or frozen)
- 1 Tbsp. chopped chives or scallions
- salt and black pepper to taste
Directions

1Melt the butter (or brown the pork).

2Saute the diced potato for a couple of minutes.

3Add chicken broth and simmer until potatoes are soft (about 20 minutes).

4Bring to a boil and add the green peas.

5As soon as peas are tender, stir in chives and serve immediately.
