- 4 filleted bass (12-inch minimum)
- 1 c. self-rising flour
- 1 tsp. baking powder
- salt
- pepper
- 1 egg, beaten
- frying fat oil
Directions

1Mix flour, baking powder, salt and pepper into a smooth paste. Add egg.

2In a heavy iron skillet, heat enough fat to half fill skillet.

3Fat is at proper temperature when a drop of batter forms a ball.

4Dip fish in batter and drop in fat.

5Turn to even cooking and cook 7 to 8 minutes, until batter coating is golden brown. Remove and put in paper lined pan in warm oven.

6Serve with hush puppies.
