- 2 c. sugar
- 2 eggs
- 1 c. vegetable oil
- 2 c. zucchini, peeled and grated
- 2 c. chopped pecans
- 2 1/2 c. flour
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 2 tsp. baking soda
- 1 tsp. salt
- 1 1/2 tsp. vanilla
- 1 c. raisins
Directions

1Preheat oven to 325°.

2Cream together the sugar, eggs and oil. Add zucchini and pecans.

3Sift together the flour, cinnamon, nutmeg, baking soda and salt.

4Then blend them into the creamed mixture.

5Stir in vanilla and raisins.

6Grease a Bundt pan, tube pan or heavy iron skillet.

7Spread in cake batter.

8Bake 1 hour and 15 minutes.

9Cool and remove from pan.
