- 2 tablespoons butter
- 2 pounds apples core, dice
- 1/2 teaspoon cinnamon ground
- 1 pinch nutmeg
- 1/4 cup sugar
- 1/4 cup brown sugar, light
- 1 1/2 cups water
- 1/2 each lemon juice of
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 3 cups flour, all-purpose
- 2 teaspoons sugar
- 1 1/2 teaspoons salt
- 1/4 teaspoon baking powder
- 6 tablespoons vegetable shortening
- 1 each eggs
- 3/4 cup milk
- 1 x powdered sugar in shaker
- 2 Scoops ice cream vanilla bean
- 1 x mint sprigs fresh
Directions

1Preheat the fryer.

2In a sauce pan, melt the butter.

3Add the apples and saute for 2 minutes.

4Stir in the cinnamon, nutmeg, 1/4 cup sugar, and brown sugar.

5Continue sauting for 1 minute, stirring constantly to dissolve the sugar.

6Add the water and lemon juice.

7Bring the liquid up to a boil.

8Add cornstarch dissolved in 1 tablespoon water.

9Whisk the vanilla and slurry into the liquid.

10Reduce the heat to a simmer and cook for 15 to 20 minutes, or until the apples are soft.

11Remove from the heat and cool completely.

12In a mixing bowl, sift the flour, sugar, salt and baking powder, together.

13Cut in the lard until it resembles coarse meal.

14In small bowl, whisk the egg and milk together.

15Gradually add the egg mixture to the flour mixture, working it to make a thick dough.

16Break the dough into 12 equal portions.

17On a lightly floured surface, roll the dough pieces into thin rounds, about 5 inches in diameter.

18Put 1/4 cup of the mixture in the center of each round, fold over and crimp the edges with a fork.

19Fry the pies, two to three at a time, in the hot oil, until golden brown.

20Remove from the oil and drain on a paper-lined plate.

21Powder the pies with powdered sugar.

22Lay the pies on a platter and serve with vanilla bean ice cream.

23Garnish with drizzle of caramel sauce, powdered sugar, and fresh mint.
