- 2 tsp vegetable oil
- 2 None eggs, lightly beaten
- 2 slices bacon, finely chopped
- 2.5 oz frozen peas
- 3 oz frozen sweet corn
- 8.75 oz cooked brown rice
- 2 None spring onions, finely chopped
- 2 tsp soy sauce
- 1 tbsp sweet chili sauce
Directions

1Heat 1 tsp oil in a large wok or frying pan. Add eggs, swirl to form a thin omelette and cook until set. Cut into strips.

2Heat remaining oil and cook bacon until browned and crisp. Add peas and sweet corn and stir-fry until hot. Add rice, onions and soy sauce and stir-fry until hot.

3Serve fried rice topped with omelette and chili sauce.
