- 3/4 c. yellow cornmeal
- 1/4 c. flour
- 2 tsp. salt
- 1 tsp. cayenne pepper
- 1/4 tsp. garlic powder
- 4 Mississippi farm raised catfish fillets or whole catfish
- vegetable oil
Directions

1Combine cornmeal, flour, salt, cayenne pepper and garlic powder.

2Coat catfish with the mixture, shaking off excess.

3Fill deep pot or 12-inch skillet half full with vegetable oil.

4Heat to 350°.

5Add catfish in single layer and fry until golden brown, about 5 to 6 minutes, depending on size.

6Remove and drain on paper towels.

7Makes 4 servings.
