- Kefalotyri or Kasseri cheese, sliced lengthwise in 1/4-inch thick wedges (about 1 lb. for 4 people)
- 2 egg yolks, mixed with 2 Tbsp. water
- flour
- olive oil
- 2 lemons, cut in quarters
Directions

1Dip cheese slices into egg yolk mixture, then into flour, coating each side evenly.

2Shake off excess flour.

3In a 10-inch skillet, heat a 1/4-inch layer of olive oil.

4When the oil begins to smoke, add the cheese.

5Fry first on one side, then the other. Remove from skillet; squeeze lemon juice on each slice.

6Serve immediately.

7Allow 2 slices for each person.
