Fried Egg Burgers

Ingredients

  • 2 tbsp olive oil
  • 1 None small onion, peeled and finely chopped
  • 1 lb ground beef
  • 2 tbsp chopped oregano
  • 2 tsp Worcestershire sauce
  • 2 tbsp tomato sauce, plus extra, to serve
  • 4 None large eggs
  • 4 None rolls or hamburger buns, halved and toasted
  • None None beet slices, tomato slices, baby lettuce leaves, to serve

Directions

    For the burger mixture, heat half the oil in a frying pan over high heat. Cook the onion for 3 mins, until softened, then cool. In a bowl, combine the cooked onion, beef, oregano and sauces. Season, then divide into four portions and shape into patties.

    Wipe the frying pan clean with a paper towel. Return to the heat with the remaining oil. Cook the patties 3-4 mins each side, until cooked through. Remove from the pan and keep warm. Fry the eggs in the same pan, as desired.

    To assemble, place a fried egg on the base of each roll and top with a burger, slices of beetroot, tomato and lettuce and some extra tomato sauce. Put the tops on and secure each burger with a toothpick, to serve.
