  • 1 (2 lb.) eggplant
  • 1/3 c. corn meal
  • 1/3 c. all-purpose flour, sifted
  • 3/4 tsp. salt
  • 1/8 tsp. pepper
  • 1 egg, beaten
  • 2 Tbsp. water
  • 1/4 c. grated Parmesan cheese

    Cut eggplant into slices or fingers.

    Sift together corn meal, flour, salt and pepper.

    Stir in Parmesan cheese.

    Combine beaten egg and water.

    Roll eggplant in breading.

    Dip in egg.

    Roll again in breading.

    Pan-fry in oil over medium heat.

    Turn only once.
