- 1/3 c. corn meal
- 1/3 c. all-purpose flour, sifted
- 3/4 tsp. salt
- 1/8 tsp. pepper
- 1 egg, beaten
- 2 Tbsp. water
- 1/4 c. grated Parmesan cheese
Directions

1Cut eggplant into slices or fingers.

2Sift together corn meal, flour, salt and pepper.

3Stir in Parmesan cheese.

4Combine beaten egg and water.

5Roll eggplant in breading.

6Dip in egg.

7Roll again in breading.

8Pan-fry in oil over medium heat.

9Turn only once.
