Fried Eggplant

  • eggplant
  • eggs
  • cracker crumbs
  • vegetable oil
  • salt and pepper
  • Parmesan cheese

Directions

    Dip strips of eggplant in flour; then in beaten egg, then in cracker crumbs.

    Saute in small amount of oil for 5 to 10 minutes or until tender and golden brown.

    Or, French fry in hot oil (375°) for 2 to 4 minutes on each side.

    Season with salt and pepper.

    Sprinkle with Parmesan cheese before serving.
