- 1 large eggplant
- 1/4 c. all-purpose flour
- 1 egg
- 2 Tbsp. milk
- 1/4 c. fine dry bread crumbs
- Crisco
Directions

1Peel eggplant and cut into sticks about 1/4-inch thick. Sprinkle with salt and pepper.

2Roll in flour, then dip into egg beaten with milk.

3Roll in crumbs and fry in hot deep fat (380° on a frying thermometer) until golden brown.

4Drain on absorbent paper and serve at once.
