- 1 large eggplant
- 1 c. corn meal
- 1/2 c. flour
- 1 Tbsp. seasoning salt
- 1 Tbsp. black pepper
- 2 c. vegetable oil
- 2 large eggs
Directions

1Cut and wash eggplant in slices.

2Beat eggs thoroughly.

3Put cut eggplant into large bowl of water.

4Put vegetable oil in skillet.

5Turn heat to medium-high.

6Beat eggs in bowl 1. Mix corn meal, flour, seasoning salt and pepper in separate bowl 2. Dip 1 slice of eggplant in eggs then dip into meal mixture, then into hot skillet.

7Repeat until skillet is full.

8Turn in skillet as needed to avoid sticking.

9Repeat until all are cooked, should be golden brown and tender.

10Best when served hot.
