  • 2 large Eggplants
  • 1 cup Louisiana Fish Fry
  • 2 large Egg
  • 1/4 cup Milk
  • 1 Vegetable Oil

Directions

    Wash and slice your eggplants and set aside.

    Heat cooking oil to approximately 370F.

    Whisk eggs and milk together in a shallow dish.

    Place fish fry in a separate shallow container.

    Dip eggplant slices in the egg/milk mixture then into fish fry to coat.

    Place coated eggplant in the hot cooking oil until golden brown.

    Drain on paper towels to absorb excess oil.
