- 2 large Eggplants
- 1 cup Louisiana Fish Fry
- 2 large Egg
- 1/4 cup Milk
- 1 Vegetable Oil
Directions

1Wash and slice your eggplants and set aside.

2Heat cooking oil to approximately 370F.

3Whisk eggs and milk together in a shallow dish.

4Place fish fry in a separate shallow container.

5Dip eggplant slices in the egg/milk mixture then into fish fry to coat.

6Place coated eggplant in the hot cooking oil until golden brown.

7Drain on paper towels to absorb excess oil.
