- 4 eggs
- 1 small can tomatoes or 4 fresh tomatoes, quartered
- sprinkle of onion or garlic powder
- 1/2 tsp. dried basil
- pinch of salt and pepper
- 1 Tbsp. olive oil
Directions

1Beat eggs lightly in a bowl; set aside.

2In a large frypan, place oil and heat.

3Cook tomatoes with rest of ingredients until tomatoes are cooked, about 15 to 20 minutes.

4Stir in eggs and keep stirring until mixture thickens like scrambled eggs.

5Serve over toast slices.
