Fried Frog Legs

- 8 pairs frog legs (hind legs only)
- 1/2 c. lemon juice
- 2 eggs
- cracker crumbs
- salt and pepper
Directions

1Skin frog legs and place into boiling water to which you have added salt and lemon juice.

2Boil for about 2 minutes.

3Remove from water and wipe dry.

4Beat eggs lightly and dip legs in it, then roll them into cracker crumbs.

5Fry in deep fat until golden brown or until done.

6This should be 3 to 5 minutes, depending on size of legs.
