Fried Green Tomatoes

- 1 c. cornmeal
- 1/2 c. all-purpose flour
- 2 lb. (4 to 5) tomatoes (green), sliced 1/2-inch thick
- salt and pepper to taste
- oil or shortening (for frying)
Directions

1In a shallow bowl, mix cornmeal and flour.

2Dredge both sides of tomato in the mixture, pressing the slices firmly into the mixture for a good coating.

3Put enough oil or shortening in an iron skillet to come to a depth of about 1/4-inch and heat over medium-high heat.

4Add tomatoes to the hot oil a few at a time without crowding.

5Fry about 2 minutes or until golden brown. Turn and cook other side.

6Drain on paper towels.

7Salt and pepper to taste.

8Serve hot.
