- 1 egg, beaten
- 1/2 c. milk
- 1/2 c. cornmeal
- 1/4 c. all-purpose flour
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 4 medium green tomatoes, cut in 3/8-inch slices
- 4 to 6 Tbsp. cooking oil
Directions

1Combine egg and milk in shallow dish; set aside.

2Stir together the cornmeal, flour, salt and pepper in another shallow dish.

3Dip tomatoes in egg-milk mixture, then cornmeal-flour mixture.

4In large skillet, heat 2 tablespoons cooking oil over medium heat.

5Arrange a single layer of tomato slices in skillet and cook about 2 minutes per side or until golden brown.

6Repeat with remaining tomatoes, adding additional cooking oil to skillet as needed.
