- 3 firm green tomatoes
- 1 egg
- 1/3 c. milk
- dash of hot pepper sauce
- 1/2 c. fine dry bread crumbs
- 1/2 tsp. salt
- 1/4 tsp. freshly ground pepper
- 4 to 6 Tbsp. unsalted butter
Directions

1Cut tomatoes into 1/2-inch slices.

2Beat egg, milk and hot pepper sauce in a shallow bowl.

3Combine bread crumbs with salt and pepper in a pan.

4Melt 2 tablespoons of butter in a large skillet over medium heat.

5Dip tomato slices in the mild mixture, shaking off any excess, then lightly coat with crumbs.

6Fry a few slices at a time until golden, about 2 minutes on each side.

7Fry remaining tomato slices, adding more butter to skillet as needed. Drain on paper towel.
