- 6 medium green tomatoes, sliced
- 1 tablespoon sugar (optional)
- 1/2 cup flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 cup butter
Directions

1Sprinkle sliced tomatoes with sugar, let stand about 15 minutes.

2Combine flour, salt and pepper and coat tomato slices.

3Melt 2 tbsp butter in skillet.

4Brown tomatoes slowly on both sides.

5Remove each batch to oven proof platter and keep in oven until all tomatoes are cooked.

6Add more butter if needed.

7For crisp slices, serve as is.

8Or add 1/2 cup light cream or dairy half and half to skillet. Heat, stirring into drippings, and pour over tomatoes.
