- 34 cup cornmeal
- 34 cup all-purpose flour
- 2 teaspoons salt
- 1 teaspoon pepper
- 2 eggs, beaten
- 2 tablespoons water
- 2 large green tomatoes, sliced 1/4 thick
- 12 cup vegetable oil
Directions

1Mix cornmeal, flour, salt and pepper in a bowl.

2In another bowl beat eggs and water.

3Dredge tomato slice through the cornmeal mixture; then through egg mixture and once again through cornmeal mixture.

4Until all slices have been coated.

5Place tomatoes in airtight container with lid.

6Refrigerate for 30 minutes.

7Heat oil in large skillet.

8Fry tomatoes (two or three at a time) until brown.

9About 2 minutes per side.

10Drain on paper towels and serve.
