- 2 lb. green tomatoes, cut into 1/4-inch thick slices
- 1 c. cornmeal
- 1/2 c. flour
- vegetable oil
- salt and pepper to taste
Directions

1Dredge tomato slices in cornmeal and flour.

2Pour oil to depth of 1/4-inch into a large heavy skillet.

3Fry tomato slices, a few at a time, in hot oil over medium heat for 2 minutes on each side or until lightly browned.

4Drain on paper towels.

5Sprinkle with salt and pepper to taste.

6Serve immediately.

7Yields 4 to 6 servings.
