- 5 or 6 large green tomatoes
- salt
- flour (for dredging)
- salt and pepper
- 6 slices lean bacon
Directions

1Cut tomatoes into 1/4-inch slices.

2Salt to taste and let stand for 30 minutes.

4Fry bacon in large skillet until crisp, then remove to drain.

5Reserve bacon fat in skillet. Season flour with salt and pepper and dredge tomato slices in seasoned flour.

6Heat bacon fat and fry tomato slices until brown on both sides.
