- 1 cup graham cracker crumbs
- 1 cup panko bread crumbs (Japanese rice bread crumbs)
- 2 eggs, beaten
- Water
- Ice cream
- Oil for frying

1Combine eggs and an equal quantity of water.

2Combine panko and graham cracker crumbs and stir.

3Form ice cream into uniform balls and freeze hard.

4Roll ice cream balls in egg wash and then in crumbs.

5Repeat twice, creating a triple breading (this also helps insulate the ice cream in the fryer).

6Quickly return to freezer and freeze hard again.

7Preheat fryer to 375f.

8Drop frozen ice cream balls into fryer and fry for about 20 seconds until breading is crisp.

9Overcooking will cause a big mess when the ice cream melts.

10Serve immediately.
