- 4 mallards (breast only)
- 1 qt. milk
- 1 c. milk
- 1 egg, beaten
- 1 Tbsp. salt
- 1 Tbsp. pepper
- 1 c. flour
- 1/2 qt. vegetable oil
Directions

1Remove breast from ducks and chop into pieces.

2Marinate in 1 quart milk for 3 1/2 hours.

3Remove.

4Mix together 1 cup fresh milk, egg, salt and pepper.

5Dip duck into milk mixture and then roll in flour.

6Preheat vegetable oil and fry at medium temperature until brown.

7Serves 6.
