- 1 to 1 1/4 lb. okra
- 8 c. water
- 1/2 c. salt
- cornmeal
- vegetable oil
Directions

1Wash okra well and drain.

2Cut off tip and stem ends; cut okra crosswise into 1/2-inch slices.

3Combine water and salt.

4Pour over okra and soak for 30 minutes.

5Drain, rinse well and drain again. Roll okra in cornmeal and fry in hot oil until golden brown.

6Drain well on absorbent towels.

7Yields 6 servings.
