- 1 to 2 lb. okra
- 5 Tbsp. Crisco
- 1/2 c. cornmeal or more if needed
- salt to taste
- pepper to taste
Directions

1Wash and drain okra; cut into pieces (not too thin) into large bowl.

2Sprinkle with the cornmeal, salt and pepper.

3Heat large saucepan; add shortening on medium.

4When melted, raise heat to medium-high and pour in okra.

5Wait for 2 to 3 minutes.

6Lower heat back to medium.
-
7Now in about 5 to 8 minutes, take spatula and lift and turn okra.

8Do not stir this okra up, please lift and turn to make a crispy fried okra.

9Lower the heat a little so as not to burn, please.

10May add more cornmeal.

11Make sure okra is well coated with the meal.
