- 2 lb. fresh okra
- 3 large eggs, beaten
- 1 tsp. water
- 2 c. cornmeal
- 1 tsp. salt
- 1/4 tsp. pepper
- vegetable oil
Directions

1Rinse okra; drain well and pat dry.

2Remove tip and stem ends. Cut okra crosswise into 1/2-inch slices.

3Set aside.

4Combine eggs and water in a bowl; stir well.

5Add okra.

6Toss gently to coat well.

7Combine cornmeal, salt and pepper in a bowl; stir well.

8Add okra to cornmeal mixture, a few slices at a time, tossing gently to coat well.

9Pour oil to depth of 1-inch in a large heavy skillet.

10Heat to 375°.

11Fry okra in hot oil over medium heat until golden.

12Drain on paper towels.
