- 3/4 c. dairy sour cream
- 2 beaten eggs
- 3/4 tsp. onion salt
- 1/2 tsp. paprika
- Crisco shortening for deep frying
- 1 pt. oysters, well drained
- 1/2 c. fine graham cracker crumbs
- 1 1/2 c. instant mashed potatoes
Directions

1Combine sour cream, eggs, onion salt and paprika.

2Mix until blended, set aside.

3Heat Crisco to 365° in deep pan.

4Coat oysters with crumbs, dip into sour cream mixture; drain well.

5Using a small amount of mashed potatoes, then adding more, coat oysters with mashed potato.

6Fry oysters several at a time for 1 1/2 to 2 minutes.

7Serve warm with lemon wedges.
