- 4 ripe plantains, peeled and cut on the bias into 1/2-inch thick slices
- Salt
- Finely chopped cilantro, optional
Directions

1Heat oil to 365 degrees F in a heavy medium saucepan.

2Carefully add the plantains, in batches as necessary, and fry until golden brown, about 3 to 4 minutes.

3Remove with a slotted spoon to a paper towel-lined plate to drain.

4Immediately sprinkle with salt and cilantro, if desired.
