Fried potatoes

  • 4 to 6 medium potatoes
  • 3 tbsp olive oil

    Wash potatoes,cut into 1 cm dice, rinse

    Place in saucepan , barely cover with cold water.

    Bring to boil, then simmer for 5 minutes, you don't want to cook through, just soften, drain.

    Put the olive oil In a wok or frying pan over medium heat.

    Add potatoes and season with salt and pepper
  6. 6
    Fry over medium heat until golden and cooked through.turning regularly.

    Serve.

    Goes with meatloaf, bacon pudding ,toad in the hole etc.

    You can use chilli or garlic oil to fry , add chopped bacon or ham or chopped fried onion (or cheat and use crispy salad onions added just before serving)
