- 4 to 6 medium potatoes
- 3 tbsp olive oil
Directions

1Wash potatoes,cut into 1 cm dice, rinse

2Place in saucepan , barely cover with cold water.

3Bring to boil, then simmer for 5 minutes, you don't want to cook through, just soften, drain.

4Put the olive oil In a wok or frying pan over medium heat.

5Add potatoes and season with salt and pepper

6Fry over medium heat until golden and cooked through.turning regularly.

7Serve.

8Goes with meatloaf, bacon pudding ,toad in the hole etc.

9You can use chilli or garlic oil to fry , add chopped bacon or ham or chopped fried onion (or cheat and use crispy salad onions added just before serving)
