Fried Potatoes With Egg

  • 2 Cup leftover boiled potatoes
  • 1/4 Cup finely chopped onion
  • 2 Tbsp. shortening
  • 3 eggs, slightly beaten
  • salt and pepper to taste

    Slice the cold leftover potatoes.

    Fry with the onions in the hot shortening.

    When nicely browned, stir in the eggs, add salt and pepper.

    Fry a few minutes longer until eggs are cooked. Good breakfast or light supper dish.

    Add a little ham if desired. Serves 4-6.
