- 1 quail or more
- salt
- pepper
- 1 c. flour
Directions

1Dress and split quail down the back, leaving breast together. Flatten out each bird with breast down and dust with salt and pepper on each side.

2Roll in flour.

3Place birds in skillet containing hot grease that will come halfway up on the birds. Brown well on all sides and then cover and turn down heat to simmer.

4Simmer 30 to 40 minutes until tender.

5The residue left in skillet may be used to make a cream gravy.
