Ingredients
- 1 cup quinoa, rinsed
- 2 cup chicken broth
- 2 tbsp vegetable oil
- 1 cup carrots, diced
- 1 large onion, diced
- 1/2 cup sweet golden corn, whole kernel
- 4 clove garlic, minced
- 1 tbsp fresh ginger, minced
- 1 cup fresh parsley, chopped
- 2 1/2 tbsp soy sauce
- 2 1/2 tsp sesame oil
- 1 tsp Smoky Chipotle Pepper hot sauce
- 1 can black beans, 15 oz.
- 3 large eggs, beaten
Directions

1In a medium saucepan, bring the quinoa to a boil in the broth.

2Cover, turn the heat to low and simmer until all of the broth is absorbed, about 15 minutes.

3Uncover and remove from heat.

4In a large nonstick skillet heat 2 tablespoons oil.

5Saute the carrots and onion over high heat until soft, 6 - 8 minutes.

6Add the garlic, ginger, and parsley and stir fry for approximately 2 minutes.

7Add the quinoa to the vegetables, mixing well, and cook for 3 minutes, stirring occasionally.

8Stir in the soy sauce, sesame oil, and Smoky Chipotle Pepper hot sauce.

9Add beans.

10Create a well in the center of the quinoa mixture.

11Pour the eggs into the well and cook, stirring until nearly set.

12Mix the quinoa mixture with the eggs.

13Serve as side dish or add in cooked chicken to make it a full meal.
