- 1/2 c. sliced green onions with tops
- 1/2 c. diagonally sliced celery
- 2 c. diced roast pork or 8 oz. peeled, deveined raw shrimp, coarsely chopped
- 2 Tbsp. vegetable oil
- 3 c. cold cooked rice
- 1 c. bean sprouts
- 1 egg, slightly beaten
- 3 Tbsp. soy sauce
Directions

1Saute onions, celery and pork in oil until vegetables are tender-crisp.

2Do not overcook.

3Add rice and bean sprouts which have been rinsed with cold water and drained.

4Combine egg and soy sauce.

5Stir into rice mixture.

6Cook, stirring 2 to 3 minutes or until heated.

7Season to taste.

8Makes 6 servings.
