- 4 to 5 c. rice
- 4 eggs
- 3 Tbsp. vegetable oil
- 2 Tbsp. scallions, chopped
- 1 tsp. salt
- 1/2 tsp. sugar
- 1 Tbsp. soy sauce
- dash of pepper
- 1/4 c. chicken broth or stock
Directions

1Cook rice.

2Heat 1 tablespoon of oil in frying pan or wok on high heat.

3Scramble eggs quickly and remove.

4Heat 2 tablespoons of oil in same pan.

5Add cooked eggs, salt, sugar, soy sauce, chopped scallions and broth.

6Stir-fry over medium to high heat for 3 to 4 minutes.
