- 2 Tbsp. chopped onion
- 1 Tbsp. margarine or butter
- 2 tsp. instant chicken bouillon
- 1 2/3 c. hot water
- 2 c. uncooked instant rice
- 2 Tbsp. finely chopped green onion
- 2 eggs, beaten
- 1 Tbsp. plus 2 tsp. soy sauce
Directions

1Combine onion and margarine in a 2-quart casserole. Microwave at High until onion is tender 1 1/2 to 5 minutes; set aside.

2Stir bouillon into hot water until dissolved.

3Add bouillon mixture, rice and green onions to casserole.

4Cover and microwave at High until mixture boils, 6 1/2 to 13 minutes.

5Let stand covered until liquid is absorbed 8 to 10 minutes.

6Stir in eggs and soy sauce.

7Microwave uncovered at High 3 1/2 to 6 1/2 minutes.

8Fluff with a fork before serving.
