- 2 Tbsp. vegetable oil
- 1 Tbsp. soy sauce
- 2 eggs, beaten
- 2 green onions, thinly sliced
- 3/4 c. ham, diced
- 3/4 c. small cooked shrimp
- 1/2 c. frozen peas, thawed
- 4 c. cooked rice
Directions

1Combine 1 tablespoon oil and soy sauce.

2Heat wok or skillet. Add oil.

3Add egg.

4Cook until set.

5Turn over.

6Remove and dice. Add other tablespoon oil.

7Stir-fry green onion and peas for 1 minute.

8Add ham, shrimp and rice.

9Mix until heated through. Makes 4 servings.

10Sprinkle with additional soy sauce when served, if desired.
