- 6 strips bacon
- 1/2 c. celery, chopped
- 1/2 c. onion, chopped
- 1/2 c. carrots, thinly sliced
- 1/2 c. bell pepper, chopped
- 1 egg
- 1 c. Minute rice
- soy sauce
Directions

1Cook Minute rice according to package directions.

2Fry bacon in skillet, remove and drain on paper towels.

3Saute chopped vegetables in bacon drippings until tender-crisp.

4Crumble bacon and return to skillet with vegetables.

5Add cooked rice, stir and sprinkle with soy sauce to season.

6Make well in mixture and scramble egg in well.

7Mix well and serve.
