- large amount cold, cooked rice
- 1 large onion
- 3 eggs
- soy sauce (La Choy)
- 1 c. any leftover meat, diced (ham, chicken or beef)
- 2 carrots, finely diced
- oil (enough to coat pan)
- 2 Tbsp. parsley
Directions

1Saute onions and carrots together until tender in a very large, nonstick pan.

2Scramble eggs and add them.

3Add meat, then rice, stirring.

4Add parsley (dried), then add enough soy sauce to make it light brown.

5Serve warm.
